Goat spare ribs
Serves 4
2 kg goat spare ribs from Knuthenlund
marinade
oil
sweet chilli sauce
sweet soy
dark beer
runny honey
finely grated garlic
freshly grated ginger
salt and freshly ground black pepper
Mix the ingredients to produce a marinade, which is not too thick.
Boil the goat spare ribs in lightly salted water for 10 minutes and then place in the marinade for at least 1 hour, ideally overnight.
Grill the spare ribs over a medium heat until golden and crisp.
